WARNING: THIS IS NOT A FOOD BLOG
I felt like I needed to be upfront with that statement! But this is a place for helping a sister out, and I found this recipe that ALL of my kids approved. That is the equivalent to all the stars aligning while a leprechaun is sliding down a rainbow, and dropping a pot of gold right in my lap!
Disclaimer #2: I cannot take credit for this recipe! Along with every other recipe I have taken a stab at over the last 12 years, it was discovered on the, ever so helpful, Pinterest. Honestly, what in the world did we do before Pinterest? Without Pinterest and Google, not only would I not be able to find a single thing to feed my family besides tacos (which wouldn’t be the worst thing, in my opinion), but I also would have never figured out what the world “cantankerous” meant. Anyways, on to the food!
COWBOY CASSEROLE
I stumbled across this little recipe on Dinner Then Dessert. And I do have to say, the name of the blog alone did have me questioning their authority in the food blogging space. I mean, can always have dessert first. ALWAYS! But I rolled the dice anyways. I was down to the wire! I had exactly 7 minutes left until my grocery delivery window would close, all would be lost, and the children would starve. I kid! But they would have definitely been at the mercy of frozen pizza for dinner!
Here’s the verdict! All four of my kids went back for seconds. Do you even need to hear more?? If you’re looking for a quick, easy, KID APPROVED dinner, you found one! So go ahead and save this in your recipe screenshots or write it down, however you keep up with those recipes you want to visit again.
This one is definitely a keep!! And it’s pretty versatile, so you can add your own flare to it! I added one of my go-to sauces at the last minute and it gave it a little extra pizzazz (also a word I wouldn’t know without our ole friend, Google. Just validating!).
Okay, so, remember how I warned you that this was NOT a food blog? If it were, right about now would be the part where I type out and expound, in depth, how to brown your ground round. And if you’re anything like me, you would be scrolling right on past it thinking “dear Lord, please give me the ingredients so my Instacart order can make it home in time!” But. This is NOT a food blog. So, here ya go! Right to the recipe!
Cowboy casserole

1 pound ground beef, (90/10 or 85/15)
1 cup corn
1 can Condensed Cream of Mushroom Soup
1 Cup cheddar chees, shredded
1/3 cup milk
1/4 cup sour cream
1 teaspoon onion powder
1/2 cup bacon, cooked and crumbled
1/2 cup Ortega Mild Ranch Taco Sauce (optional)
Directions
- Preheat oven to 375 degrees.
- In a large skillet, brown the ground beef over medium heat and strain.
- Add corn, cream of mushroom soup, shredded cheese, milk, sour cream, onion powder, and bacon to the skillet and mix.
- In a 9x13 pan layer the beef mixture, drizzle the ranch taco sauce (if you opted in), then cover with a single row of tater tots.
- Bake on 375 degrees for 40-45 minutes, uncovered.
- Serve and enjoy! (p.s. it will be piping hot! I would hate for you to burn your taste buds and miss out!)
